Zesty Pasta Salad

Ingredients:
 
1 bag rainbow spiral noodles
1 bottle Seven Seas Viva Italian dressing
1 cucumber sliced
2 mushrooms sliced
2 Roma tomatoes sliced
3 green onions chopped
 
Feeds about three people.

 


 

Chicken Broccoli Casserole

 

1 large package of frozen broccoli
1 package of chicken breasts ( 4-6 breasts)
1 family size can of Campbell's Cream of Chicken soup
1 regular size can of Campbell's Cream of Broccoli soup or Cream of Celery soup or Cream of Mushroom soup
Garlic salt
My favorite spice is McCormick's Montreal Steak Seasoning Salt I sprinkle on about 2-3 teaspoons and mix it into the casserole before baking
Wheat bread crumbs (1-3 pieces of bread) or a package of stuffing mix
3 Tablespoons butter (real butter is best)

 

Boil the chicken breasts until completely cooked. About 20-30 minutes boiling. Rinse them off in cold water so they don't burn your hands. Take cooking scissors (I like the Pampered Chef cooking shears) or a knife and cut the fat and any other undesirables off the chicken breasts.  Cut the chicken up into small chunks and separate them with fingers.

 

Cook the frozen broccoli in the microwave until it's thawed out. My microwave takes about 6 minutes. Drain off water.

 

Combine chicken, broccoli, soups (no water) and spices. Place them into a casserole dish. Top with the bread crumbs or stuffing mix. Melt the butter and spoon it over the top of the breadcrumbs.

 

Bake at about 350 for 45minutes to an hour. Broccoli should be tender when it's completely cooked. Makes a good meal with a salad.

 


 

Puppy Chow

For the sweet tooth

 

1 box Crispix Cereal
1 bag of of Chocolate Chips
1 cup of Peanut Butter
1 stick of Margarine
 
Melt Chocolate Chips, Margarine and Peanut Butter together. Stir in cereal until covered with mixture.  Put mixture into paper or plastic sack with 2-3 cups of powdered sugar (or as much powdered sugar is needed). Gently shake until mixture is covered with powdered sugar.
